Method

  1. Cut the discs across so you end up with little matchsticks of aubergine. Heat 1-2 tbsp olive oil in a large non-stick frying pan. Add the aubergine in batches, and fry on a fairly high heat until really tender and golden. You want it to be melt-in-the-mouth with no rubberiness left. Season and tip out onto a plate.
  2. Wipe out the pan then add another tbsp oil and cook the garlic for a minute. Add the chilli flakes and tomatoes and simmer for 10 minutes. Cook the linguine following packet instructions. Stir the basil and aubergine into the sauce and heat through. Toss with the drained linguine and finish with the grated cheese.

    Added a generous splash of red wine and used grated mature cheddar to keep it vegetarian which was really tasty. Nice recipe and dead easy even for inexperienced chefs!

    Fab recipe, I added a few chopped sundried tomatoes and served with tagliatelle. Probably even better with real tomatoes. Will definitely cook again.

    Really enjoyed this, made exactly as recipe states, and used Feta. will definitely make again and again. The linguine makes a really nice texture change to spaghetti too. Be sure to save a little of the pasta water to toss with the sauce at the end as it keeps it lovely and silky...

    Eating on my own tonight so halved the ingredients and followed the recipe but with the addition of a pinch of sugar and a dash of red wine vinegar in the tomato sauce, finished off with pecorino shavings. Very quick and tasty.

    I absolutely love this pasta dish! The clue is to use a good splash of olive oil and frying in batches until it's reduced to 1/4 the size and the aubergine is almost translucent. It changes the texture completely and it's all buttery. Yum!

    Tasty aubergine pasta dish where the aubergine is the star (There is another aubergine and goats cheese dish on here and the cheese overpowers the dish). The frying takes a bit of time and effort but I think its worth it to get flavour into the dish and I would make again. I tweaked by adding a bit of sugar and tomato puree. I would also use a larger aubergine for two people next time as it does shrink down quite a lot! Good meat-free option.
