Spanish rice with prawns & chorizo

Method

  1. Cook the onion and pepper in 2 tbsp olive oil in a wide, shallow pan until softened. Add the chorizo and cook for a couple of minutes until the oil is released. Stir in the rice until coated in all the oils. Stir the saffron into the stock then add to the pan and stir well. Put on a lid and cook for 15 minutes until the rice is tender and the stock absorbed.
  2. Stir in the prawns until heated through completely, then squeeze over lemon and toss through the parsley.

    This tastes great, really lovely flavours and the rice isn't dried out like most paella from the shops. Really quick and easy too.

    Very easy to cook considering first time ever made a paella type recipe! Great place to start! Adding tinned tomatos to the stock makes it more flavoursome!

    Yum and very easy !I didn't even have saffron and parsley here when I cooked it and was delicious anyway. Added some parmegiano on top instead. Brilliant!

    Fantastic recipe! We REALLY enjoyed this one - a definate keeper. I did however follow fellow 'Good Foodians' advice and used mixed seafood instead of just prawns and also replaced some of the stock with white wine. delicious and and easy too, thanks for the tips!

    Mmmm really good! cooked it for my family's lunch, and even though my mum is vegetarian and picked out her chorizo, the oilyness of it remained and still gave it a unique taste differing from merely prawns and rice. Really good with a crunchy piece of bread like baguette or italian ciabatta to 'clean' the plate.

    Very tasty although the chorizo overpowered the whole dish. I don't eat meat but will eat dishes with meat in (I just don't put the meaty part on my plate and distribe the meat to everyone else) but I found the flavour of the chorizo very strong. Still nice, but I think if I was going to make it again I may split off my section before adding the chorizo

    This is a beautiful, easy, midweek meal. The only thing I personally found was, I had to add alot more than 400ml of stock, probably more like 600ml but this was only added bit by bit to cook the rice a little more. My husband who adores paella said it was fantastic so definately one for paella fans (even though it is called spanish rice)? Enjoy I did and is now a firm favourite midweek meal!

    My first ever attempt at paella and it was so easy. I added some mixed seafood at the last minute for a bit more variety and it was lovely. Really easy to make and impressive - will be making again very soon.

    Wonderful easy recipe that makes a great dinner or lunch meal. I prefer to use raw prawns and ensure they cook through before serving - I think it gives them more bite. But overall a great dish and so easy I wonder why anyone buys ready made meals!!
