Spanish rice with prawns & chorizo

Method

  1. Cook the onion and pepper in 2 tbsp olive oil in a wide, shallow pan until softened. Add the chorizo and cook for a couple of minutes until the oil is released. Stir in the rice until coated in all the oils. Stir the saffron into the stock then add to the pan and stir well. Put on a lid and cook for 15 minutes until the rice is tender and the stock absorbed.
  2. Stir in the prawns until heated through completely, then squeeze over lemon and toss through the parsley.

    Couldn't get paella rice so had to make do with risotto rice. Thought that the dish was a little expensive for what it was - rather bland. That said anything with prawns and chorizo has to be nice. Wouldn't make it for guests though because it lacks zing.

    Brilliant recipe. My husband who is not normally keen on paella even liked it. I prefer to user raw prawns adding them right in the end for a min or two until they turn pink. This will definitely be part of my regular repertoir. Goes great with a glass of white wine!

    Beautiful! Very easy to make and extremley tasty - will efinately be a family favourite. Would be very easy and suitable for a Spanish style dinner party.

    Have made this loads as it's so simple and tasty. Often add a bit of chicken too or top with squid or mussells for a more authentic touch. Made it for someone who doesn't like peppers and substituted with good quality vine tomatoes which actually allowed the subtle taste of the saffron to shine through. Delicious. Having it tonight as a matter of fact!

    Surprisingly easy and absolutely delicious! We also added 150ml of wine to the stock and used a mix of mussels, prawns and squid. Would definitely be making this one again!! :-)
