Spanish rice with prawns & chorizo

This colourful dish uses small quantities of expensive ingredients, making it great value

Method

  1. Cook the onion and pepper in 2 tbsp olive oil in a wide, shallow pan until softened. Add the chorizo and cook for a couple of minutes until the oil is released. Stir in the rice until coated in all the oils. Stir the saffron into the stock then add to the pan and stir well. Put on a lid and cook for 15 minutes until the rice is tender and the stock absorbed.
  2. Stir in the prawns until heated through completely, then squeeze over lemon and toss through the parsley.

    Extremely tasty and very easy. Don't try and economise by using turmeric instead of safron, it really does make a difference. I used more chorizo and finished the dish with a few mussels and a langoustine for each diner. I also put white wine into the stock. I suppose it defeats the object of a cheap dish but it certainly tasted good!

    Very quick and easy and really tasty, an even simpler version of the Easiest ever Paella, Will definatley do again as I usually have the ingredients, even my OH asked how to make it- that's a first!

    This was absolutely delicious. The only thing I changed was to add less chorizo which I compensated for by adding a quarter of a teaspoon of smoked paprika and a clove of garlic after the onion and pepper had softened. Highly recommended!

    We have just been on hols to Zanzibar and I raided the spice market, including a BIG packet of saffron so we had to cook saffron dishes ;-) Tried this last last night with a good bit of saffron, home-made chicken stock, white wine, langoustines and mussels (thanks to shako40 !!) and it was very nice - we will be doing this again.

    Couldn't get paella rice, so just used some Uncle Ben's long grain. The flavours were delicious. Have never used saffron before, but glad I splashed out for it. Yum, yum!

    Excellent speedy mid-week supper. I used large raw prawns which worked brilliantly and the whole dish had my husband and I licking the plates at the end! He said it was the tastiest thing I'd made in a long while!!
