Grilled miso aubergines

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Score a criss-cross pattern into the flesh of the aubergines. Brush with 1 tsp oil and season. Put on a non-stick baking tray and roast for 20 minutes.
  2. In a small bowl, mix the miso and mirin with the sugar and the lemon juice. Spread this paste over the roasted aubergines and sprinkle with the sesame seeds. Put under a hot grill for 2-3 minutes until golden. Serve scattered with the spring onions and a handful of rocket.

    Having had delicious miso aubergines in a local japanese restaurant on numerous occasions, I decided to give them a try at home and am pleased to say that they were *almost* as good! I served them with the Spicy Cucumber Salad recipe also on this site and the clean flavours of that worked really well. Will do again and would urge others to give them a try!

    I absolutely loved this, was so flavoursome. The recipe was incredibly easy to make and I will definitely be makin again. Surprisingly filling too!

    I'm giving this 4 stars bcs it has great potential but my effort was more like a 2. Think my aubergines were too large and they didn't fully cook through - next time I'll slice them and cook until they're good and melty. The flavours were spot on though.
