Crab & avocado salad with pepper lime dressing
A fast and healthy salad is just the thing for a midweek meal as summer approaches

- In a small bowl, mix 2 tbsp oil, the lime juice, hot sauce and coriander, and season well. Divide the spinach between 2 plates.
- Add the avocado, tomatoes, crab and breadcrumbs to the plates and pour the dressing over just before you eat.

- 1 small avocado , cut into chunks
- 50g cherry tomatoes , halved
- 100g white crabmeat
- handful chunky breadcrumbs , toasted
