Chicken biryani

A great one-pot rice dish that can still be served up a few days later, perfect for leftovers

Method

  1. Soak the rice in warm water, then wash in cold until the water runs clear. Heat butter in a saucepan and cook the onions with the bay leaf and other whole spices for 10 mins. Sprinkle in the turmeric, then add chicken and curry paste and cook until aromatic.
  2. Stir the rice into the pan with the raisins, then pour over the stock. Place a tight-fitting lid on the pan and bring to a hard boil, then lower the heat to a minimum and cook the rice for another 5 mins. Turn off the heat and leave for 10 mins. Stir well, mixing through half the coriander. To serve, scatter over the rest of the coriander and the almonds.

The next day, enjoy a Coronation chicken rice salad for lunch. Mix the cold rice with mayonnaise and a squeeze of lemon juice and serve with Baby Gem leaves and sliced cucumber.

    This a regular for me as a cheap Saturday night takeaway alternative...always a crowd pleaser, kids absolutely love it and it's simple and quick to make. I roast chicken legs or thighs and strip the meat instead of breats which is both cheaper and the meat is tastier (in my opinion) Enjoy!!

    I followed the recipe exactly as it said and my rice ended up very sticky. Not the fluffy rice i was expecting. Definately too much stock there. Even though I ended up with sticky rice, it was still very nice.

    Really good, quick, simple curry. I let it dry out a little bit.... maybe use 800ml instead of 850ml of stock.

    Sorry this is not a chicken biriyani. This is a chicken pulao recipe. No short-cut like this, in biriyani if you want the taste of biriyani. You have to put some time ,care and patience to cook real biriyani. http://www.facebook.com/pages/Easy-Chicken-Recipes/163766820353082

    Brilliant, family (3 generations) all loved it! Recipe allows for leftovers which I can't wait to have for lunch tomorrow. Think we'll add more raisins next time.

    Really tasty - I was concerned that all the liquid wouldn't be absorbed but it did! I just added some steamed green beans and broccoli at the end for a bit of health.

    Not eating meat we substitute the chicken with either quorn pieces or prawns and use veg stock rather than chicken stock. The results are fantastic, great recipe and easy to cook.

One-pot rice supper

Ingredients

  • 300g basmati rice
  • 25g butter
  • 1 large onion , finely sliced
  • 1 bay leaf
  • 3 cardamom pods
  • small cinnamon stick
  • 1 tsp turmeric
  • 4 skinless chicken breasts , cut into large chunks
  • 4 tbsp curry paste (we used Patak's balti paste))
  • 85g raisins
  • 850ml chicken stock
  • chopped coriander and toasted flaked almonds to serve
