Chicken biryani

A great one-pot rice dish that can still be served up a few days later, perfect for leftovers

Method

  1. Soak the rice in warm water, then wash in cold until the water runs clear. Heat butter in a saucepan and cook the onions with the bay leaf and other whole spices for 10 mins. Sprinkle in the turmeric, then add chicken and curry paste and cook until aromatic.
  2. Stir the rice into the pan with the raisins, then pour over the stock. Place a tight-fitting lid on the pan and bring to a hard boil, then lower the heat to a minimum and cook the rice for another 5 mins. Turn off the heat and leave for 10 mins. Stir well, mixing through half the coriander. To serve, scatter over the rest of the coriander and the almonds.

The next day, enjoy a Coronation chicken rice salad for lunch. Mix the cold rice with mayonnaise and a squeeze of lemon juice and serve with Baby Gem leaves and sliced cucumber.

    Absolutely delicious. So very easy. I made it using Madras paste which I reasoned would be hotter so only used 3 heaped teaspoons and it was still a bit hot for my son... but he ate it all! Will definately make this again. Will make a good dinner party dish as it's all done in 1 pot.

    This was such a simple tasty recipe. Great mid week as so quick. I used madras paste which I reasoned would be hotter so only used 3 heaped teaspoons which was still a bit hot for my son... but he cleared his plate! Will definately make this again.

    i have made this now twice for the husband (dont know what he did to deserve that) and it is really delicious. Easy and simple to make too - easy to substitute certain ingredients. easily as nice as a take away. will add this to my list of meals i am fantastic at cooking (so thats now 2) x

    This went down a treat! We stole Phildelahaye's idea and swapped half of the chicken for mushrooms and courgette. Definitely a keeper!

    This was lovely and easy to make.I've even managed to get my 7 year old to eat it even though he swore blind he didn't like indian food!I used sultanas instead of the raisins and it gave it a nice sweetness.

    made this for the whole family and very fussy 7 year old wolfed it down along with a side dish of sag aloo and naan bread, has anyone got a breadmaker recipe for naan? Will definately be making this again.

    Having read all the above accolades I knew this dish had to be, at the very least, decently good, so I decided to make it for dinner last night. Was it "decently good?" No it was not .... it was absolutely SUPERB! What a winner! My husband was still talking about it this morning and telling me that I must make it again for him. You bet I will be making this again - and again and again and again! Enjoy!

    dead dead easy but tasted like a lot of effort shall definately have again. had it with the basic curry sauce which i liked but partner wasn't that keen on.

    I agree with all the other comments - this was really simple to make and tasted great. I already had madras paste so just used half the amount and this worked fine. Made for dinner today for just 2 of us but used the full amount of ingredients so we can have the rest cold for lunch tomorrow.

    I found this to be a very good recipe. I used 650ml of stock and leftover chicken from a roast. Also used a milder paste. It was a real treat. Tasted great and I think the fragrance from the spices works very well. I have also tried the recipe as it is described and i think 850ml of stock is too much, it does not absorb the rice enough. 650ml is good.

  • 300g basmati rice
  • 25g butter
  • 1 large onion , finely sliced
  • 1 bay leaf
  • 3 cardamom pods
  • small cinnamon stick
  • 1 tsp turmeric
  • 4 skinless chicken breasts , cut into large chunks
  • 4 tbsp curry paste (we used Patak's balti paste))
  • 85g raisins
  • 850ml chicken stock
  • chopped coriander and toasted flaked almonds to serve
