Method

  1. Heat the olive oil in a large pan, then tip in the onion and garlic. Cook over a moderate heat until the onion has softened, about 5 mins. Stir in the tomato purée, then pour in the chopped tomatoes and basil leaves, and bring up to the boil. Turn the heat down and leave to simmer for about 15 mins until thick and full of flavour. If you like a smooth soup, whizz the mixture at this point to form a smooth sauce. Can now be cooled and frozen for up to 1 month.
  2. To finish the soup, tip the tomato mixture into a pan. Spoon the baking soda into a small bowl and pour over 1 tbsp or so of the milk. Mix together until there are no lumps, then tip into the tomato mix and pour over the milk. Bring up to a boil (the mixture will froth, but don't worry - it will go away). Gently simmer for about 5 mins until ready to serve.

Creamy tomato soup is the stuff of childhood, and it's simple to make yourself. I didn't want to overload it with cream and came across this idea of using baking soda when I lived in America - it stops the milk from curdling. Don't worry, you won't taste the baking soda at all.

    I doubled the amount of tomato puree and chopped tomatoes which gave it a richer, tomato-y flavor. Served it with a crusty bread. Definitely will make again soon.

    i agree with all the above comments as we also add more tomatoes than stated in the recipe and also added some seasoning. all of the family enjoyed this recipe and it is nice and easy.

    I took the tip from other reviewers to double up on the tomato content and I'm glad I did, I think it would have been bland otherwise. I also added a little vegetable bouillon powder to give it a bit more flavour. The method is super quick and easy though and I like the bicarb tip!

    I halved the tomatoes too, and added a spoon of sugar. Lovely but very sweet. I served mine with black pepper and shaved parmesan.

    Glad I read the comments before I made this soup, as did everything suggested, and it was lovely, my kids could not get enough which is great because it helps towards their 5 per day fruit and veg, I will definatley make this again.

    Great soup - although next time I would take everyones tip above about doubling the tomato content. One quick question - my milk did seem to curdle a little bit although I did everything to the letter - could anyone help - I did use bicarbonate soda, as I couldn't find baking soda, is this right? Many thanks

    Fantastic soup. Kids loved it! Chopped and cooked some bacon at stage 1 with the onion and garlic. Adds a lovely extra hint of flavour. Also added extra toms!!

    Easy peasy , first soup made and well tasty and low fat i used red top milk with a splodge of creme freche and some extra tomatoes to taste .

    Delicious. I also added extra tomatoes and tomato puree. Didn't have any fresh basil so threw in some dried. It was fine. Served the soup with a blob of creme fraiche and croutons mixed in with grated cheese - yum !

    doubled up on the ingredients as other reviewers, made a lovely soup but maybe a bit sharp. So I added the brown sugar suggested and now we can't get enough of this wonderful soup. Low Fat too always a bonus!
