Crisp chicken bites

Method

  1. Cut the chicken breasts into small chunks, each about the size of a marble (you should get roughly 15 pieces per breast). Put the pesto in a bowl and mix together with the chicken until coated all over. Tip the breadcrumbs into a large freezer bag.
  2. Add the chicken pieces in batches to the bag and give it a good shake to coat. Place a piece of greaseproof paper on a baking sheet, then lay the chicken pieces on the sheet, making sure none of them are touching. Put in the freezer and, when frozen solid, take off the baking sheet and store in a container or freezer bag.
  3. To cook, heat oven to 220C/fan 200C/ gas 7. Pour a little oil onto a shallow baking tray, just enough to cover it. Put the tray in the oven and let it heat up for 5 mins. Tip the chicken onto the sheet and return to the oven for 10-15 mins until crisp and cooked through.

Using pesto adds flavour and means you don't have to faff about dipping the chicken in flour and egg before coating with crumbs.

    Cooked these before and they turned out great. Not as crispy as I would like but I think the oven wasn't hot enough. I cooked from frozen and they were fine - I think because they are so small it isn't a problem to cook from frozen.

    Wow. These are really easy and all my children (ages 1,2,6,7) have eaten them without a single complaint which is really unusual! Much better than shop bought dodgy things!

    Need to ensure that a good pesto is used as it can really alter the taste. Needed to add salt to make it taste a bit better, but otherwise not a bad snack.

    i have often made these for my children and my husband,my daughter had a party at home recently and as these are so easy to make i made a big batch and the teens wolfed them down,some of the girls wanted to know where i got them and lots took the recipe with them.a great way to get them to eat something trendy but also healthy.

    Great recipe. Tasted great. Makes two large trays worth so I also have a batch in the freezer for next time. So easy to make - I'll never go back to store-bought nuggets! Also, next time I might add different seasoning to the breadcrumbs - the possibilities are endless!

    Forget about the children. Think nibbles, canapes, hand-held first course for large gathering meals, especially with some of the tweaking proposed by others above.

    Made these for two very fussy kids (and one slightly fussy man) and it was a huge success. Comments were: "best nuggets ever" "10/10" and "9/10" (only lost a point because one decided there were slightly too many breadcrumbs for his taste) No-one knew the pesto was in there (as I suspect they would have all said "euuuwwww" or something similar if they had known in advance!) they all just thought they were really tasty, and I have to confess, despite not being a chicken nugget fan normally, I loved them too! May try using to coat a butterflied chicken breast next and see if it's as good for a slightly more grown-up dinner.

    Fab and easy recipe, I followed some of the tips on here, adding some crushed cornflakes to the breadcrumbs as well as garlic granuals, paprika and cajun. I used green pesto as we didn't have red. I didn't freeze them but cooked them from fresh. My boyfriend loved them, and we are doing to make these now instead of buying from the supermarket! I served them with home made potato wedges.

    I made these for my 2 year old the other week but just used tomato sauce as I wasn't sure if she would like the pesto. She loved them with the tomato sauce. So after making them for my daughter I decided I would try them for myself but again I'm not sure about pesto so I used a BBQ sauce and kept my chicken at goujon size and they where amazing!
