Crisp chicken bites

Method

  1. Cut the chicken breasts into small chunks, each about the size of a marble (you should get roughly 15 pieces per breast). Put the pesto in a bowl and mix together with the chicken until coated all over. Tip the breadcrumbs into a large freezer bag.
  2. Add the chicken pieces in batches to the bag and give it a good shake to coat. Place a piece of greaseproof paper on a baking sheet, then lay the chicken pieces on the sheet, making sure none of them are touching. Put in the freezer and, when frozen solid, take off the baking sheet and store in a container or freezer bag.
  3. To cook, heat oven to 220C/fan 200C/ gas 7. Pour a little oil onto a shallow baking tray, just enough to cover it. Put the tray in the oven and let it heat up for 5 mins. Tip the chicken onto the sheet and return to the oven for 10-15 mins until crisp and cooked through.

Using pesto adds flavour and means you don't have to faff about dipping the chicken in flour and egg before coating with crumbs.

    Absolutely delicious! These were so simple but the result was moist, tasty and really lovely. I cooked mine from fresh for about 10 minutes and served them with potato wedges and salad. Yum yum!

    Yummy Yummy!!! I love these chicken bites. Perfect for when you're home alone and can't really be bothered making a big fancy meal. I used panko breadcrumbs and sun-dried tomato pesto and had it with southern fried wedges and coleslaw - simple, but effective!

    These are really fantastic. Love the extra taste from the pesto. Lovely with chips and peas. As suggested in one of the reviews will try putting garlic and parmesan in the breadcrumbs next time.

    Love this recipe. Had to use green pesto as had no red but have now bought some specifically for this recipe! Kids love them, which is no mean feat with 2 fussy children.

    Went down really well with my 2 year old and 4 year old. So much easier than messing about with flour and egg. Was worried they would turn their noses up at the red pesto part but they didn't seem to notice. Served with Gordon Ramsay's oven chips. Yum.

    These are absolutely delicious! I cooked mine straight away with no problems, and will certainly be making more for the freezer. Just a word of warning if you use Panko crumbs....you certainly don't need 300g! I had a 200g packet and dumped them all in a bowl, and now have probably 190g left with bits of pesto in them! But I am going out to buy more chicken to use up some of them!

    lovelt and crispy, i made my own sundried tomato pesto- with jar of sundried tomatoes, olive oil, balsamic vinegar, basil, garlic and pine nuts- whizz them all up- delish! also left some chicken in big goujons and used jamie olivers garlic and chilli pesto and coated in breadcrumbs- take an extra few mins to cook but just as nice.

    I made these for my kids who can be very picky and they loved them, and now I have to make double as my husband is always stealing a few (and me!) Now I have rolling batches in the fridge for those evenings when I can't think of what to give them for dinner. Perfect!

    could somebody please tell me... i have frozen these bites raw and now want to cook them... do i defrost them first or cook from frozen. i am concerned as i've never cooked 'raw' chicken from frozen. THANKS
