Healthy coleslaw

Method

  1. Mix the yogurt, mustard and mayonnaise together in a bowl. Then, use a grater attachment on a food processor, or a box grater, to grate the cabbage and carrots. Either grate the onion or chop as finely as you can. Tip all of the vegetables into the bowl and stir through the dressing.
  2. Will keep in the fridge for up to 3 days.

Shop-bought coleslaw often comes laden with a gloopy mayonnaise. I've used yogurt instead, which gives a nice tang and makes it that bit healthier.

    Only just realised I like coleslaw, so I've never actually bought it from the shop and just made it from scratch as I'm doing slimming world! Used fat free yog and extra light mayo and it is soooo yummy! deffo be making again!

    made several times, like others say its best to reduce yogurt. also, i use a crunchy apple and red onion grated (tried with white but red gives a subtle taste which doesn't detract from the overall taste, and looks prettier). overall, so easy to make in processor and tastes so much better than store bought

    This coleslaw is so simple & much nicer than shop bought! I just grated by hand which only took a few minutes but I didn't add any onion.

    Just made this, Used FAT FREE YOGHURT and NO mayonnaise. Is very VERY nice! Added plenty of pepper and a pinch of salt. no need for any of them added calories :D

    really nice and simple to make. Used half a red onion, at first i did what some others did and only used 4 table spoons of yogurt, but it was too dry so ended up adding 5 spoon fulls and 3 spoon fulls of mayo. Had it with mustardy potato and chive salad another recipe on this site i would recommend making. Went down lovely with a leafy salad and italian dressing, cherry tomatoes extra mature cheddar, beetroot and some pickle with a crusty french stick and a few slices of ham.

    Really good. Used my Julienne peeler for the carrots but struggled to grate the cabbage and onion, so ended up chopping them. Would definitely make again.
