Healthy coleslaw

Method

  1. Mix the yogurt, mustard and mayonnaise together in a bowl. Then, use a grater attachment on a food processor, or a box grater, to grate the cabbage and carrots. Either grate the onion or chop as finely as you can. Tip all of the vegetables into the bowl and stir through the dressing.
  2. Will keep in the fridge for up to 3 days.

Shop-bought coleslaw often comes laden with a gloopy mayonnaise. I've used yogurt instead, which gives a nice tang and makes it that bit healthier.

    only used 4 tablespoons of yogurt - thanks for tip! didn't bother with the onion, and used low cal versions of yogurt and mayo to cut down cals a bit... ace to make on a sunday for work lunches the week ahead

    i'm really fussy about coleslaw but found this recipe really tasty and simple! i also used low fat versions of the yogurt and mayo and a food processor was not required, a grater is fine. no more shop-bought coleslaw for my family!

    Quick and easy to make and a lovely flavour. Increased the portion sizes as made for a BBQ for 40 people - who didn't leave much! Did as others suggested put in less yoghurt. Will def do this again. So much cheaper than shop bought and nicer too.
