Halloumi salad with orange & mint

A vegetarian favourite, we've given this salad an extra zing to really tantalise those taste buds

Method

  1. Heat a large griddle or frying pan over a high heat. In a large bowl, combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, then gently toss together.
  2. Slice each block of halloumi into 8-10 pieces, then griddle or fry for 1-2 mins on each side until charred and beginning to melt.
  3. Add the walnuts and salad leaves to the orange and mint, then toss together. Top with the griddled halloumi slices and season with some black pepper.

    Firm family favourite - to make and to eat! I use milder salad leaves for those that don't like peppery watercress and rocket. I think the combination with rocket tastes best. I've also substituted pecans instead of walnuts dependent on who is dining, some folk aren't so keen on walnuts. Black seedless grapes are also good to add to the mix.

    Another winner for a quick late home from work dinner. Tasted fresh & zingy rather than a clash between sweet & savoury (normally hate friut or sweet things in savoury dishes). Have already put high on list to make for vegetarian friends plus can't wait to eat this on hot summers day maybe out in the Med to get even fresher flavours.

    This is a great starter. Really quick and easy. I cooked it for my patner and 11 year old daughter and we all loved it. Infact, Im thinking of using it as a starter for a dinner party i am having this weekend

    I made this for a starter at a dinner party and it worked beautifully- a few of my friends were new to halloumi but they were soon converted. Very easy to make, though make sure the oil is well heated for the halloumi before cooking, else it will stick and fall apart.
