  • 150ml hollandaise sauce, to serve (we used Joubére Fresh Hollandaise Sauce)

Method

  1. Heat oven to 200C/fan 180C/gas 6. Heat the oil in an ovenproof pan over a high heat. Add the salmon, skin-side down, then cook for 5 mins until the skin is crisp.

  2. Add the asparagus and vine tomatoes to the pan, then place in the oven. Cook for 7-10 mins until the salmon is just cooked through.

  3. Add the tarragon to the Hollandaise and stir through. Drizzle over the salmon, then serve.

I love the hollandaise and tarragon sauce although I did cheat by buying a fresh sauce to which I added the herbs! Also roasted some baby potatoes. A very quick and 'cheat' dish that looks good and tastes divine!

Really tasty and fresh. We used creme fraiche with tarragon added to that which worked just as well and reduced the cals a bit!

Made this last night for Valentines Dinner, being from Yorkshire served with a few new potatoes & some rocket. Very tasty, my other half enjoyed it & especially liked the tarragon & hollandaise sauce. Couldn't find fresh tarragon though & being February the plant in the garden is nowhere to be seen yet, so used dried - warmed it first in pan before adding hollandaise - worked very well

Have made this time and time again. I like to add a bit of black pepper to the hollandaise. A firm favourite!

Delicious and easy changed the sauce to lemon and dill as slightly less fat then hollandaise. Plus added some par boiled new potatoes roasted in a little olive oil at the same time as the fish to complete the meal
