Potato salad with sweet onion dressing

Perfect picnic food, the longer the potatoes are left the more flavour they absorb - it's also great hot

Method

  1. Boil potatoes in salted water for 10-15 mins until tender. While the potatoes are cooking, mix together the remaining ingredients to make the dressing. Drain the potatoes and while still hot, mix together with the dressing.
  2. Tip into a secure container to take with you.

    There is no maesurement scale on the amounts in the ingredients. e.g. 1/2 Sugar could be 1/2 a grain or 1/2 a Kg.

    Lovely receipe. I served it hot - but equally nice cold as leftovers! Next time tho I would use half the amount of onion - as it was a lot.

    really good, especially the leftover the next day!! yum..! for the sugar i just added to taste...but not very much was needed, just enough to overcome the tartness of the vinegars!

    yummy! yummy! yummy! wonderful hot or cold. I did half the onions as the required amount was too much. wonderful on a picnic. a nice change from boring mint and butter in new potatoes

    I was disappointed to be honest. I left mine overnight, and then ate them cold as part of a 'pot luck' lunch, but they hadn't really taken on much flavour.

    This was so easy, and very very tasty- just as nice cold the next day! Went down a treat with dinner guests! I heated the dressing in microwave first so sugar started to dissolve then poured over onions and left on a low temp for about 30 mins before serving- otherwise sugar didn't really do anything!

    Made this for a picnic today. Only modified slightly - used barely any oil at all and warmed all the dressing ingredients in a pan before pouring over potatoes. I also used one large red onion instead of small and red wine vinegar instead of cider. Went down a treat with everyone, I will make it again!

    As I can't stand mayo, it's great to find a really tasty potato salad recipe that doesn't need it. This will become a summer/party favourite for sure!
