Banana Bran Loaf Cake

A very easy recipe for a healthy moist cake which is delicious served with custard

also 25 minutes needed for all bran to soak in the milk

Method

  1. Measure out the all-bran, milk and sugar then mix together in a large mixing bowl - leave to soak for 25 minutes
  2. Measure out the flour and sultanas then add to the mixture - stir in well
  3. Add the honey and mashed/pureed bananas
  4. Pour into a greased loaf tin at then place into a pre-heated oven a 180C
  5. Bake for approximately 30-40minutes our until a knife comes out clean
  6. Leave to stand for at least 1 hour before serving - the cake will seem quite mushy at first but will soon set

    Took over an hour to cook, and still a bit too gooey. Will try again with less milk.

    Absolutely gorgeous, making another one today as yesterdays has almost gone! I did have to cook it about 15mins longer than was stated above but worth the wait.

  • 75g all-bran cereal
  • 300ml semi-skimmed or skimmed milk
  • 150g caster sugar
  • 180g sultanas/raisins
  • 2 medium sized bananas (mashed or pureed)
  • 180g wholemeal self raising flour
  • 1tbsp of runny honey
