Chicory, bacon & pear salad with honey dressing

Raid the fruit bowl for this fresh and crunchy salad, pears with bacon make a perfect match

Method

  1. Grill the bacon until crisp and golden then drain on kitchen paper and cut into small pieces. Whisk together the dressing ingredients and season.
  2. Mix the chicory, lamb's lettuce and pears together in a bowl with the dressing. Scatter the walnuts and bacon over and serve.

Try grated apple instead of the pear wedges and add shavings of parmesan or Grana Padano instead of the bacon.

    very easy weekend lunch served with some fresh bread. I left out the walnuts (never popular in our house).
