Method

  1. Arrange the mozzarella, prosciutto and melon on 2 plates.
  2. Drizzle with olive oil and a squeeze of lemon juice. Sprinkle lightly with sea salt flakes and cracked black pepper.

    Where do I find this type of melon? I haven't saw them in the supermarket and wondered if they are hard to come by? Is there a substitute I could try?

    In answer to Margaret's question, Charentais is similar to Canteloupe so you could use that instead

    I substituted smoked back for the prosciutto, eggs for the melon and sausages for the mozzerella. Then I added black pudding, tinned tomatoes and a fried slice et voila . . . a full english. What else would you have on your first day back from Veneto?
