Manchego & fresh fig chutney for crostini

Try this delicous chutney that will turn ordinary crostini into something special that everyone will love

Method

  1. Put the onion, sugar, spices, ginger and vinegar in a pan and cook together slowly until the onion is completely softened.
  2. Add the fig wedges and cook for another 5-10 minutes until the figs are just starting to break down. To serve, top the crostini with a little Manchego, some fig chutney and a couple of rocket sprigs.

    I left out the star anise for this recipe as I didn't have any at home but it was still absolutely delicious - a really unusual and special dish. We ate it with a few other antipasti type things and had a nice bottle of red!

    never used fresh figs before so had no idea what to do with the half dozen handed to me from a friends tree. Made this chutney but without the Star Anise - it was really tasty, ate it with a warm goats cheese and rocket salad.

    This was one of the best starters I have ever done. My guests all marked it 10/10 and left with the recipe! It is absolutely gorgeous and tastes like you have slaved in the kitchen for hours. Highly recommended!

    I cut up the figs extra small and had it with blue cheese on a ciabatta sandwich. Unconventional perhaps but very tasty.

    I served this with the butterflied leg of lamb with paprika that was cooked on the grill. Star anise is easy to get from places like chefshop.com. Very simple to make.

  • 12 thin slices French stick , drizzled with olive oil and toasted
  • 100g Manchego , shaved
  • a handful rocket
