Pea, feta & herb fritters

These colourful fritters are a great way to sneak veg into the kids' diets

Method

  1. Mix together the flour, baking powder, egg and milk to make a batter. Stir in the peas, feta, herbs and spring onions and season really well.
  2. Heat a large non-stick frying pan with a little oil. Drop spoonfuls of the batter into the pan and cook for 2-3 minutes each side until golden and cooked through. Sprinkle with sea salt. Serve 3 per person with roasted cherry tomatoes on the side.

    I'm going to give this recipe a try. Assume you can use cooked and cooled chopped onion instead of spring onions as I'm not too keen on those. Will give it a go.

    made these in turkey with fresh peas & mint from the market- divine. Saved some batter for next day- still great. Looking forward to eating these again, but feel won't be the same with good old UK frozen peas. Take this recipe on holiday with you for sure.

    Surprisingly delicious! I'm not a fritter fan, but really enjoyed these. Very easy to make. Changes: I used gram flour (instead of plain flour) and yellow split peas that I had blended to a smooth pulp. My family liked them, too. Next time I'll try Cheddar.
