Lamb steaks with spiced tomato sauce

An ideal after-work supper prepared in just one pan and packed with subtle spices and flavours

Method

  1. Gently crush the cumin and coriander seeds in a pestle and mortar. Fry the crushed spices and garlic in 1 tbsp oil for a minute or 2 then add the lamb and brown on both sides.
  2. Add the tomatoes and simmer gently for 8-10 minutes. Stir the coriander through the tomato sauce and serve with brown basmati rice.

Add a tin of drained chickpeas towards the end of cooking for a Moroccan feel or throw in some blanched and chopped green beans with the tomatoes

    Tasty, cheap and easy, this dish was lovely. I had a little of the sauce left over so had it for lunch the following day with pasta. Would probably be nice with chicken, pork or white fish as well. Will definitely make again as it used mainly store cupboard ingredients so great for people on a budget.

    This was very tasty, I'm not mad on lamb so I added chickpeas and a pinch of chilli flakes to the sauce and it was really nice. Served with cous cous it made a really filling and healthy dinner. Will definitely make again.
