  • 1-2 red chillies, seeds in or out (depending on how hot you like it), finely chopped
  • 150ml single cream
  • PLUS 2 tsp olive oil

Method

  1. Squeeze the sausagemeat out of the skins, breaking into grape-size chunks. Heat the oil in a frying pan. Fry the chunks for about 8 mins until crisp and golden.

  2. Meanwhile, cook the pasta and chop most of the rocket. Add the chilli to the sausages, fry for 30 secs, then tip in the cream and chopped rocket. Season and heat until the rocket has just wilted.

  3. Drain the pasta, reserving some of the cooking liquid, then mix the pasta through the sauce with a splash of cooking water. Top with remaining rocket

I had my reservations about this recipe, as I've not really enjoyed rocket sauces in the past but needed something quick and had all the ingredients to hand. Unfortunately, my doubts were well-founded. The rocket made the creamy sauce taste very bitter and unpleasant. Perhaps if the chillies had been a bit hotter it would have been a little better, but I'm more inclined to think that the recipe was just so wrong on every level that nothing could salvage it.

I'd rate this 10/10 wouldn't cook again. Didn't the have the linguine so used spaghetti, unfortunately my son doesn't like sausages so I used mince beef instead. Couldn't find the rocket in the supermarket so fried mushrooms and onion with the beef and thought a tin of tomatoes would be nicer than the cream so added that. The reviews below suggested the chillies might be a bit bland so sprinkled 25g of mild cheddar on top. Couldn't understand why people in the comments below didn't like it, my wife even said it reminded her of Dolmio. What a result!

Not creamy enough for me, and also a bit bland... Added a bit of creme fraiche and Parmesan to thicken it up a bit, but needed something else to added a bit of flavour

I found this disappointingly bland :( Lemon juice enhanced the flavours very slightly, but somehow everything seemed to be masked under the cream. A real shame as I loved the sound of this...

First time I followed the recipe, found it a bit bland, read the comments and added red onion, chorizo, Parmesan and 250 ml of cream. Very tasty, everyone loved it.

A little bland, needs more rocket. Also, add a few cherry tomatoes to bring the dish together completely. It's not bad, but not anything to write home about.

Great dish but to upgrade it a bit use Italian or Chorizo (not the salami though) sausages or even Lincolnshire or other flavoursome sausages and add parmesan or grano padano cheese grated over the top - good supper dish.

Slit the skins lengthways with a sharp knife and just slip them off. Squeezing is tedious and the skins will inevitably burst.

This recipe is very bland. I added more cream as found it too dry, garlic, mixed herbs, fresh basil and plenty of salt and pepper. It was lovely. Next time I will pop some fresh tomatoes in it. Definately a recipe that needs tweaking.
