Cheat's chicken Kiev

Homemade chicken Kievs don't have to mean hours in the kitchen. Just add spuds and salad before serving

Method

  1. Heat oven to 200C/180C fan/gas 6. Whizz together the 2 peeled garlic cloves, parsley and 1 tsp olive oil in a food processor. Add the breadcrumbs and seasoning before pulsing briefly to mix. Tip onto a plate.
  2. Cut a slit (roughly thumb-length) in the side of each chicken breast, at the plump end. Spoon ¼ of the soft cheese into each hole and press the edges together to seal. Rub 2 tsp oil over all the chicken breasts before pressing the herby crumbs onto them.
  3. Place the coated chicken in a shallow roasting tin. Scatter round the remaining unpeeled garlic cloves and drizzle with the rest of the oil. Bake for 20-25 mins until the chicken is cooked and crumbs crisp and golden. Squeeze out the soft, roasted garlic from the skins and serve with the chicken.

    Very easy and tasty. Now a firm favourite in our house! Perfect for aspiring kids who want to make dinner. We're garlic-a-go-go in this house so I chop up a garlic clove to put in the crumbs too.

    With the chicken defrosted and being fed up with curry I made this today. No problems making the crust although I did add some coarsley ground pepper and being short on some ingredients I shoved a couple of cheesy cubes (sliced) in the breasts with a crushed garlic cube. I enjoyed it, and the wife loved it. With the current bad publicity on processed foods, I don't think I will be making shop made ones again. This was easy peasey!

    Found this was a brilliant alternative to the ready-made ones I pick up in a hurry. The only problem I found was that 20 mins was far too long to cook my chicken breast at the temperature given as it came out quite dry. Next time i'd probably keep an eye on it- 15 mins would probably do the trick! Either way, had no complaints and clean plates! :)

    Great recipe! However I find that you get a much better result if the chicken is dusted with flour and dipped in egg before coating with the breadcrumbs. There is also less chance of the cheese oozing out. I don't see any reason why they can't be frozen but I'm not sure if I would risk cooking them straight from the freezer. If anyone has tried this perhaps they could post their results?
