Asparagus, mozzarella & prosciutto parcels

Try this simple, but smart, starter using English asparagus

Ready in 20 minutes, plus setting

Method

  1. Blanch the asparagus for 2 minutes then refresh under cold water. Cut each mozzarella slice in half and sit both pieces on top of 2 spears of asparagus. Top with 2 more spears then wrap the asparagus in prosciutto so the mozzarella is enclosed (you will need 2 or 3 strips).
  2. Heat a little olive oil in a pan, then carefully fry the parcels until the prosciutto has crisped and the mozzarella oozes.
  3. Whisk together the olive oil and vinegar and add the basil. Serve each parcel with salad leaves and a little dressing drizzled over.

    This is great as a starter or side with chicken for your main. So easy and quick to make, tastes great! I've used Parma ham on a few occasions, works just as great, if not better!

    loved it! easy to make and really tasty. would recommend for dinner parties as you can prepare early on in the day. i did a side of spinach and cherry tomatoes with the basil dressing on too and it worked really well together.

    Fantastically easy and great tasting. I did it as part of a "tapas style" main meal and must confess that I ran out of time to do the dressing, but noboldy noticed and they went down a real treat.

    This went down really well as a starter for lunch for friends. I assembled them in advance and fried them off when the guests arrived. I too found it a bit fiddly to keep the four spears together with the cheese so I took Rosemary's advice and did two parcels each and it worked really well. Will definitely do again.

    We made this as a starter for a dinner party and it was fantastic! Instead of just using mozzarella, we put some Boursin cheese in there as well which tasted divine...also put them on a baking tray and cooked at 180 degrees for 10 minutes so that I could spend more time with our guests and ensured that the parcels didn't fall apart. For my vegetarian friend, we used a carrot peeler and sliced strips of courgette to wrap the asparagus and cheese (having blanched it first).

    Amazing. I made it ahead and chilled it until I was ready to serve the food. It went down really well and gained complements from people who don't like asparagus! Flavours worked well together and made for a very tasty starter.

    I'm cooking this for a dinner party on Saturday. I'll add pesto inside the parcel, and might oven cook. I'm worried the prosciutto will crisp before the mozzarella gets a chance to melt? Also, cooking for 7, so might be easier timing wise!

    We had this as part of a quick snack for lunch - it was perfect for making a small bunch of asparagus go further. My boyfriend said it was restaurant quality!

    Great starter and so easy. We live in middle of asparagus growing country so used very fresh, very fine stalks. Used 10 each serving. Prepared parcels well in advance and cooked in a hot oven for about 7-10 minutes. Made dressing with hot pan juices and a little balsamic vinegar. Perfect. Definitely do it again and again.

    i love this recipe. made it 3 times already. but i been making 2 spears per parcel instead of 4 after my first try. 4 is just too much. 1 prosciutto, 2 asparagus and mozzarella. well fried. some vinegar. yum.

    This was a great recipe, easy to make and delicious. The basil vinaigrette accompanied the dish nicely and cut through the saltiness of the proscuitto. Would recommend for a dinner party as this can be made well in advance.

    This is a great recipe and very easy to prepare. However, I found that the mozarella can go a bit stringy when it's fried. I wonder if I'm cooking it for too long (not more than 2-3 minutes)?
