Pea, radish & rare beef salad
Add colour and texture to a simple beef salad with peppery radishes and fresh peas

25 minutes
- Heat a griddle until smoking hot. Oil the steak on both sides and season really well. Griddle for 1 minute each side then leave to rest for 5 minutes.
- Arrange little gem leaves on 2 plates. Slice the steak and toss with the radishes, peas and mint. Pile on top of the leaves. Whisk together the crème fraîche, Dijon and horseradish with enough water to give a drizzling consistency. Season, then drizzle over the salads.

- 200g fresh peas blanched for a minute and refreshed
- a small bunch mint leaves
- 3 tbsp crème fraîche
- 1 tbsp Dijon mustard
- ½ tbsp creamed horseradish
