Champagne & elderflower jellies

Shiny, modern and very glamorous champagne jellies - perfect served at any celebration

Method

  1. Soak the gelatine in cold water until softened. Put 100ml water and 1/4 of the Champagne in a pan with the caster sugar. Heat gently until the sugar has dissolved then squeeze the excess water from the gelatine sheets and stir into the liquid. Strain into a bowl, leave until cooled.
  2. Add the rest of the Champagne and the cordial. Divide the jelly between 6 Champagne glasses. Chill for about 4 hours (or overnight) to set.

    Delicious, I made this to use up some leftover champagne (I know, I do realise how ridiculous that sounds!), so had to amend the quantities accordingly. I needed to add more gelatine than stated & re-set it, but that might be because I wasn't sticking to the stated quantities. The end product was great and you could really get the bubbles of the champagne.

    These could potentially be really nice. I made it using a cheap sparkling wine but I think it worth getting something a bit more decent as it did taste like a cheap wine. I had thought the flavour of the elderflower may help with that but I have to agree with Gina I couldn't taste the elderflower at all! they also took considerably more than four hours to set. I would definitely recommend making them the day before to be sure. I will make these again but as I say with a bit more of a decent wine and I would increase the amount of elderflower!
