Cauliflower, broccoli & mature cheddar gratin

Give good old fashioned cauliflower cheese a contemporary twist to create quick, simple supper

Method

  1. Steam the broccoli and cauliflower until just tender, about 5-6 minutes. Mix the crème fraîche, cheese and chives and toss with the veg.
  2. Pile into 2 small ovenproof dishes and top with a handful more cheese. Grill until golden.

    Lovely flavours but not enough sauce - certainly nothing like in the photo! Would make again but with a lot more creme fraiche.

    Made this with double the amount of creme fraiche. Also felt that the sauce needed something more, so added a teaspoon of wholegrain mustard and sprinkle of parmesan to the sauce as well as the cheddar and chives. Also added some parmesan to the top and some fresh white breadcrumbs. Was a lovely combination of flavours, but the sauce was a bit runny. I would like to try with a conventional cheese sauce but it would be a shame to take away the lightness of the dish. Perhaps I will try baking it in the oven rather than grilling next time. Despite all that, it's a lovely dish and a good way to get non-veg lovers to eat their veg, as apparently it all tastes better covered in cheese!

    Have used a better recipe than this - the creme fraiche didn't work for sure....and the photo of the finished dish? Well, that almost put me off to start with.....as my Hubby said, the photo looks like he made it!! :)

    Well I live in America so I already had my challenges in finding creme fraiche, forget half fat, and we don't have a grill, but i mixed half and half creme f and sour creme and it worked just fine, i added milk to make the mixture more saucey but it wasn't necessary, all got a bit soggy but there was still none left! Easy version of the real thing

    We made this last night for tea and it was not good!!! The cooking time was not long enough, the broccoli and cauliflower was still raw when cooking time completed, suggest completely cook the veg first before mixing in with sauce. The end dinner was nothing like the picture it was very dry, could have done with more sauce too. the sauce was light but wasn�t anything special, would make it again but with different veggies (leeks, carrots, pepper and cauliflower) and put more flavours into the sauce, perhaps heating the sauce up a bit to melt the cheese first, adding mustard, garlic, chilli into it and possibly using half pouring cream and half crème fraiche. We were not impressed by this recipe on its own!!!

    So much easier than the traditional way. As well as the cheddar I sprinkled some feta cheese that was needing to be used up on top and used full cream creme fraiche as it was all I had in at the time and it was delicious. I popped it in the oven to reheat while we were having our soup then under the grill to finish off. This is a definitely an adaptable recipe that I would use again. The chives add a lovely flavour.

    this was delicious and far less time consuming and labour intensive than regular cauliflower/broccoli cheese sauce bakes. I only had full fat creme fraiche though, definitely creamy and tasty! I also didn't have any fresh chives, I just threw in some mixed herbs. Will have to try chives the next time!

    I used less cauliflower/broccoli and a lot of extra cheese. In the end it still did not look like the indulgent cheesy meal in the picture. I would advise keeping extra creme fraiche and cheese to hand in case you have a similar experience. Also - creme fraiche curdled. What did I do wrong?
