Cauliflower, broccoli & mature cheddar gratin

Give good old fashioned cauliflower cheese a contemporary twist to create quick, simple supper

Method

  1. Steam the broccoli and cauliflower until just tender, about 5-6 minutes. Mix the crème fraîche, cheese and chives and toss with the veg.
  2. Pile into 2 small ovenproof dishes and top with a handful more cheese. Grill until golden.

    I've made this twice now it was even better the 2nd time, the chives make all the difference. Great when weight watching too!

    This was really good, I have done similar before but made a proper white sauce etc, the creme fraiche was much easier and tastier too I thought.

    I adapted this recipe and used leeks, carrots & mushrooms with the cheese and it was lovely, also can liven it up with some garlic and or chilli makes a lovely supper

    I made this with broccoli, cauliflower and carrots and it was delicious. It is a deffinate winner for fussy kids and exhausted mothers. Easy to hide any vegtables in and super quick to prepare.

    Absolutely gorgeous! Not the world's lighest meal though. I ended up adding loads more cheese (as I'm addicted to mature cheddar)and using light sour cream as I couldn't find any half fat creme fraiche, and it still turned out fantastic. Chives are a must.

    I have added some left over of blue cheese ( never enough cheese!!) and some pancetta cubes that I fried with some onions as I did not have any chives..... and it was amazing!

    Great with a bit of fried sliced garlic in it. Half-fat creme fraiche was surprisingly very successful. Tried mixing in some blue cheese with it, but couldn't really taste that.

    Nutrition rating probably not very accurate since you need to double the quantity of cheese just to cover the top of the dish.

    I had a big problem with this recipe. The creme fraiche was fairly solid and it failed to mix in with the vegetables giving a dry and boring effect. Nothing like the picture. I have some left over for tonight so I am going to make some white sauce to liven it up a bit. I am going for the conventional cheese sauce in the future.

    Dont know how this comment came about, but I didn't write it. On looking at some of the comments, I wouldn't change a thing. My complaint is, the recipe doesn't change to lbs/ounces for us ex pats in the US who luv this site, and luv anything Britt' Cheers ;o))
