  Great dish considering all you need is a microwave! Couldn't find Tilda Rizazz Mediterranean Tomato so used Uncles Bens Tomato and Basil cooked ride instead - worked well!

  Tastes great with left-over basmati rice as well. Also worked well with double gloucester - the only cheese my son will eat. Quick and easy.

  I don't like ready-made rice so I made my own with a tsp of marigold stock and a squeeze of tomato purée and cooked the peppers in the oven instead of the microwave, so not quite as easy as the recipe but even more delicious!

  Always keep left over rice in the the freezer. So this made a quick and impressive "ready" meal

  Excellent and easy. I like my peppers a bit charred so microwaved to soften for a few minutes, but after piling the filling in, I finished off in a hot oven for 15 minutes.

  I've not tried this recipe yet, but am doing so tonight. They look gorgeous, and reading everyone's comments, they obviously taste it too! I've made stuffed peppers just out of anything i can find in the fridge, and they've always been lovely. I wonder if these will beat my usual "recipe"! I certainly like the idea of only using the microwave :-)

  My husband made this for dinner last night. Delicious. He's not a bad cook, and his verdict was: Quick and easy recipe to follow. Didn't use the ready rice - cooked Thai sticky instead.

  Really good, used short grain brown rice cooked with a tomato chipotle stock cube, so nice and spicy too. Definately quick and easy as I always have rice in the freezer.

  These were so good! I added 100g of goats cheese and about 200g of Quorn to the mixture inside to make it a more nutritious veggie meal, and it was lovely! Really tasted of the meditterean but surprisingly quick and easy!

  I used ordinary "easy to cook rice" and mixed with pesto and used peas instead of Olives. I added the goats cheese and zapped in the microwave. This is such an easy meal to make! Next time I think I may add slices of cooked chicken or possibly lardons. Very tasty.

  Such a fantastic recipe. My husband made these last night as I'm not very well so he's trying to help out. He has never cooked - ever - and yet he managed these no problem and they really were very nice! They didn't seem like they'd come from the microwave. We had them without the olives because we dont like them but everything else was exactly as the recipe.

  Made this for the highly critical family as an alternative to peppers stuffed with bacon and mushrooms with rice. They all liked it and no complaints at all!!! Must have been good then.

  I made this tonight but used brown rice and a mix of cheddar and an Italian hard cheese. It was delicious. Was going to be just a starter but I was too full to have much else afterwards. Even my fussy husband liked it. I will definitely make again.

  This was lovely, though as I was only having two peppers and used rice that took two mins. in the microwave, really only needed to place them in the microwave for 4mins after they were already cooked, and used the top of the pepper as a makeshift lid. Delicious, quick and perfect with a rocket salad.
