Prawn curry in a hurry

Method

  1. Drizzle some oil from the curry paste jar into a wok or large frying pan, gently heat, then add the onion. Sizzle over a low heat for 4 mins until the onion softens, then stir in the paste and cook for a few mins longer. Stir in the prawns and tomatoes, then bring to a simmer. If using raw prawns, simmer until they have changed colour and are cooked through. Season, if you like, then add the coriander just before serving with boiled rice and naan bread.

Buying prawns

Look out for prawns labelled 'North Atlantic', as they've undergone a much shorter journey than farmed prawns from the tropics. North Atlantic prawns also have a delicious, sweet flavour.

Fragrant coconut curry

Sizzle a couple of tbsp Thai green curry paste in a wok or frying pan for a few moments, then add the prawns and a 400g can reduced-fat coconut milk instead of the tomatoes. Bring to a simmer, then cook until the prawns are cooked through. Add the coriander just before serving.

    really easy to make and very tasty too, perfect for a Friday night will definitely make again but would probably add some spinach next time.

    I also thought this tasted too much of tomatoes, and not enough like a curry. The overall taste was pretty bland, and I don't say that because I'm some kind of curry expert - far from it. Maybe the thai version would be better?

    Great recipe, very tasty. The first time I made it there seemed to be too much tomato in it, so the second time I made it I put less in and it was still very tasty. I also mixed spinach in with it to make it extra healthy.

    cant beleive how easy this receipe was.....and unlike the currys from our takeway not greasy nor has that orange film to it....will be cooking it again. didnt have chopped tomatos with garlic at my supermarket so used chopped tomatos and a couple of cloves of crushed garlic....tasted good!

    THE NUTS OF SIMPLE RUBY !!!! one simple dish, quick and easy, huge taste. I used Sainsburys own paste and it knocked me over. I fried the prawns first though.

    Need to really reduce down the tomatoes to make this taste good, which I would recommend doing before you add the prawns otherwise they'll be overcooked. Another couple of improvements are (1) to grate in some ginger and garlic when the onions are nearly cooked and (2) to grate in some creamed coconut or add a little dessicated coconut towards the end of cooking.

    I cooked this for 4 using Patak's korma curry paste (3 tbsps) to 500g of king prawns. I also put in half a bag of fresh spinach just towards the end. Chopped frozen coriander from W/rose is super convenient - you wouldn't know the difference! I would definitely make this again my family said it was delicious.

    The whole family loved this one, even my 6 year old! I used korma paste and added spinach to bulk it out and up the veg content. It was so quick and easy to prepare but tasted fab, just the kind of meal I love. A firm favourite.

    This curry was really tasty and so easy to make. I added an extra tablespoon of curry paste as I like lots of flavour in my curry I also used chicken insteas of prawns. I served it with toasted wholemeal pittas. Loved it!

    Very easy and tastes very nice! I added some cashews and cooked the tomato sauce for about 20 minutes until it was very "jammy" and then stirred in the prawns at the last second. Yummy!

    This dish was quick and simple to prepare and cook but it tasted far better than anything you would get pre-prepared in a jar. I would highly recommend. After tasting this recipe, I don't think I would go back to a jar again. Thanks :-)

    Absolutly delicious! Lovely fresh tomato flavour but I did have to add about 3 times the amount of balti paste to make it 'curry' like - but it would be equally as nice without it all together! Made half with chicken to please my prawn-hating boyfriend & he loved it too!
