Thai salmon with cucumber & dipping sauce

Method

  1. Put the salmon in a bowl with the chilli, garlic, coriander, fish sauce, sesame oil and honey. Season with pepper and refrigerate for at least 20 minutes or overnight.
  2. Grill or barbecue the salmon until it is crisp at the edges. If you like it cooked all the way through rather than rare in the middle then keep cooking until the fish feels very firm to the touch. Serve with the cucumber and onion sprinkled over and the sweet chilli dipping sauce.

The marinade also works on chicken breasts, white fish fillets and even steaks. Serve with rice or noodles.

    Very easy and tasty, we all loved it, including the children (7 and 9)!. I used a flat griddle, did the salmon flesh side first, for a minute or so, flipped it over when it was just caramelised, meanwhile heating up the remaining marinade to boiling, then spread the marinade over the top of the salmon, and put under the grill to finish it off, and it was delicious. I also stirred some chopped coriander into the chilli / lime sauce, as it looks like that is what was done in the photo. Recommended as a great family meal, especially if people aren't sure about salmon.

    FAB FAB FAB! I didn't have sesame oil, but olive seemed to work and also a bit of ginger gave the marinade a bit more dimension! DELICIOUS!

    Very nice and tasty and I'm not a big salmon lover. Was testing this recipe for Boxing Day - cooking Thai for friends and one of them not keen on meat so planning on doing this as an extra dish. Stuck to the recipe for the sauce apart from used Very Lazy Chillies instead of fresh, and added a bit of crushed ginger. Left in marinade for about 6 hours but would leave overnight next time. Grilled it and didn't keep an eye on it properly so burnt the ends of the salmon a bit but still tasted nice! Served with carrot ribbons, beansprouts and Amoy straight-to-wok ribbon rice noodles (not sure if I did something wrong with the noodles but they were very 'clumpy' and didn't go into nice noodle ribbons!) stir-fried in the leftover marinade. Think will def make for Boxing Day as very quick and easy to make the sauce and can get it ready the night before - might try griddling or doing on the BBQ instead.

    Have made this 3 or 4 times now and never fail to be impressed by the flavour and simplicity of such a tasty dish. I prefer to serve it with fresh egg noodles (£1.00 from most good food outlets) and pak choi/onions/soy sauce flash fried whilst the salmon is grilling and then tossed into the noodles just before serving.

    I've just made this and it was wonderful! simple, tasty and a big hit with the other half as well, we both love thai food and this is a cheaper and healthier alternative, he's not a fan of cucumber though so I added some sweet chilli sauce to the remainder of the marinade and mixed it with some egg noodles which were also very nice. Big thumbs up :)

    This is my favourite salmon recipe ever! It is just so wonderful. The flavours are fantastic. I cook it in an overproof dish at save as much of the marinade as possible for 15-20 mins

    Super for a weeknight meal as quick and simple, the edges of my salmon blackened slightly under the grill but this just made it even more sticky and delicious. A nice change as salmon dishes were getting boring. Will def do again!

    Made this for a dinner party last night and it was absolutely delicious! Wasn't sure how long it would take to grill the salmon but 10 mins at 250 degrees C seemed to do the trick. Will definitely be making again!
