Thai salmon with cucumber & dipping sauce

Method

  1. Put the salmon in a bowl with the chilli, garlic, coriander, fish sauce, sesame oil and honey. Season with pepper and refrigerate for at least 20 minutes or overnight.
  2. Grill or barbecue the salmon until it is crisp at the edges. If you like it cooked all the way through rather than rare in the middle then keep cooking until the fish feels very firm to the touch. Serve with the cucumber and onion sprinkled over and the sweet chilli dipping sauce.

The marinade also works on chicken breasts, white fish fillets and even steaks. Serve with rice or noodles.

    I really wanted to love this recipe, especially after reading all the reviews but truth be told it did nothing for me. I marinated the salmon overnight and used the left over marinade as a sauce for the accompanying noodles which was nice. I didn't like the chilli and lime sauce - I found the flavours too strong and contrasting. The salmon and noodles all got eaten, don't get me wrong but like I said it just didn't do anything for me, I think there are nicer marinades recipes for salmon. I won't be making this again.

    I've made this a few times now using Salmon, Cod and Chicken. It works fantastically with all, but I was suprised how good the marinade was with chicken!! Personally I love the mix of flavours, and it is now very much a firm favorite in my house. I now add one dessert spoon of Soy sauce to my marinade, and the slight saltiness works well for me. I've got some Salmon in the marinade right now, and that's my dinner for tonight!

    This was so delicious, i added the soy sauce as mentioned in a previous comment and it created a fabby flavour. With the remaining marinate i added it to some stir fry veg and noddles and it created a beautiful flavour and meant no waste. Such a worthwhile find and by the reaction i will be making this again and again.

    Did this dish for my daughter and partner. They absolutely loved it. Served it with rocket salad, new potatoes and couscous. Even my husband loved it who doesnt normally like salmon. Definitely a dish I will serve again.

    Lovely dish, but do be careful if you do it on a griddle pan, mine burnt - it was still really tasty and very moist inside but the kitchen got pretty smoky!!

    im not the biggest fan of salmon but i loved this recipe, i ran out of fish sauce so i kinda made my own salty type sauce with a tablespoon of boiling water a few drops of soy sauce, a tiny bit of marmite and a tiny bit of pineapple to balance it out, instead of serving this with rice i served it with noodles with the sweet chilli sauce and it was yum!

    Really tasty and different way to cook salmon. I will definitely be adding this to my regular meals. I didn't really like the raw red onion on top though as I find it gives you really bad breath! Cucumber was nice but I wouldn't out the onion on top next time.

    This was lovely, made the marinade quickly before I went to work and left it in the fridge with the salmon all day, then grilled and it was perfect. Didn't bother with the red onion and cucumber, just put together a quick stir fry with noodles, baby corn, mangetout and grated carrot with a splash of sweet chilli sauce and served the salmon on top, really yummy, quick and simple dinner.
