Thai salmon with cucumber & dipping sauce

Method

  1. Put the salmon in a bowl with the chilli, garlic, coriander, fish sauce, sesame oil and honey. Season with pepper and refrigerate for at least 20 minutes or overnight.
  2. Grill or barbecue the salmon until it is crisp at the edges. If you like it cooked all the way through rather than rare in the middle then keep cooking until the fish feels very firm to the touch. Serve with the cucumber and onion sprinkled over and the sweet chilli dipping sauce.

The marinade also works on chicken breasts, white fish fillets and even steaks. Serve with rice or noodles.

    salmon was half price in tesco, asked them to fillet it (no charge) and got 16 portions and the tail ends (will make a salmon/brocolli bake). th ginger and chilli was 25p so this was less than £1 a portion and tasted divine. I thought chilli may over power salmon but it was a great cheap easy tea. i served it with dagmas detox salad which was also fab. this is now firmly in my recipe folder.

    I used this recipe last year - then forgot how great it was. Thanks for the reminder. Made it for my 85 year old Dad this week who says he doesn't do garlic or chilli and he said it was 'beautiful" and I've got witnesses so there's a result!

    I loved this and so did my guests. I used lemon marmalade instead of honey, and added ginger and the chilli dipping sauce to the marinade. I then heated the marinade as sauce. Delicious!

    This is a really easy, really tasty dish, served with steamed jasmine rice and some prawn or thai crackers and it can also be an elegant dinner party dish, lovely.

    Excellent recipe. Not mad about salmon usually, but this really perked it up. Flavours were lovely, not over powering and the onion/cucumber salsa was an excellent accompaniment. It was very easy to do & looked v. professional. Excellent for a dinner party or just an easy but v. tasty workday meal.

    I made this today for the first time & can't wait to make it again! Lovely flavours & great to have a marinade without soy sauce in! I followed an earlier comment and used a griddle pan which worked really well & took just a few minutes each side. We like ours spicy so used a big chilli and left the seeds in!

    This dish blows my mind! It was AMAZING!! My friends were so impressed too. It's so quick and easy and the taste is do die for. I will definitely be making this frequently. I made bok choy with oyster sauce on the side.. deeeelish!.

  • 4 salmon fillets
  • 1 thumb sized red chilli , deseeded and finely chopped
  • 2 garlic cloves , finely chopped
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey

  • red onion , diced
  • 4 tbsp sweet chilli sauce , mixed with a squeeze of lime juice
