Ingredients
- 4 salmon fillets
- 1 thumb sized red chilli, deseeded and finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp fish sauce
- 1 tbsp sesame oil
- 2 tbsp honey
- ¼ cucumber, diced
- red onion, diced
- 4 tbsp sweet chilli sauce, mixed with a squeeze of lime juice
- coriander, handful, roughly chopped

Method
- Put the salmon in a bowl with the chilli, garlic, coriander, fish sauce, sesame oil and honey. Season with pepper and refrigerate for at least 20 minutes or overnight.
- Grill or barbecue the salmon until it is crisp at the edges. If you like it cooked all the way through rather than rare in the middle then keep cooking until the fish feels very firm to the touch. Serve with the cucumber and onion sprinkled over and the sweet chilli dipping sauce.

This recipe was delicious. My husband said it was the best meal I had made for ages. I made the amount of marinade in the recipe but used only 2 salmon steaks and as suggested by others added some grated ginger. I didn't make the dipping sauce but served it with a rice noodle salad with Thai dressing which I adapted from a recipe I found in Gordon Ramsay's Appetite book. I can't wait to make it again.
Made this for supper last night. Its is very, very tasty and so easy to prepare and cook. Added fresh ginger to the marinade and an extra chilli. Served with rice noodles and the chilli dipping sauce. Squeezing the lime juice through the chilli sauce really does improve the flavour. Altogether a fab dish which has become a firm favourite overnight.
very yummy. I added fresh grated ginger as suggested above, and used chilli flakes since I didn't have any fresh. I left out the cucumber, red onion, dipping sauce stuff but served it with a Nigella couscous recipe. I put the leftover marinade in a small saucepan with a bit of water and cooked it briefly to pour over the salmon when cooked. It was good!
Cooked this for the first time this evening and I am extremely happy with everything about this dish. I don't normally cook Salmon for myself but due to being on a diet I needed to find some tasty dishes and as this one didn't sound too difficult to make I decided to have a go. It is amazing and as easy as it says. My husband and mother-in-law both had it and said how delicious it was too. I will definately have this again.
For someone who thought salmon tasted like 'dirty water' my boyfriend sure made his way through this dish!
I marinaded the salmon overnight which gave it a much stronger flavour. I served with noodles and also stir fried some peppers in the left over marinade. So delicious we're having it again this week!
