Ginger & chilli salmon in a parcel

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Put each salmon steak in the middle of a piece of baking parchment or foil. Put some ginger and spring onion on top of each and then add a few drops of soy sauce and chilli oil.
  2. Fold the parchment into parcels around the fish, put on a baking sheet and cook in the oven for 10 minutes. Open the parcels, sprinkle over some coriander and serve with rice.

    It's a really simple dish that we had for our Christmas Eve dinner. I'm not a big fan of fish so i was a bit unsure about this dish. To my amazement it was absolutely gorgeous i could it eat everyday if Salmon were cheaper! I'd recommend this dish to everyone whether you like fish or not!

    Very tasty,easy and no pans to wash,great. i'm personally not fund of salmon,but in this recipe it was very nice .I already made this dish several times, my family loves it specially my daughter.

    The ginger and chilli give a real lift to the salmon. A firm favourite for a quick and easy supper for 2 or as an impressive dinner party dish. Goes well with buttered new potatoes and green veg as an alternative to rice

    I tried this recently very nice will definately do again. I cooked this with new potatoes and steamed vegetables, it would be very dry with rice in my opinion.

    lovely easy dish to cook after work. salmon was moist and delicious. only thing was i didnt konw how mouch soy to use, just a teaspoon on each fillet is enough...

    This was delicious, my boyfriend just made this for me and it was really flavoursome. salmon was moist and there was juices left in the paper to pour over the rice!! Served with steamed pak choi. This must have been easy as he said he would do it again!!! :)

    A great recipe. I added half sliced red pepper, a sliced courgette, tender stem broccoli (blanched for 5 mins) and some straight to wok noodles to the parcel and cooked for 20 minutes. A complete meal in a parcel and was very tasty and simple to do. Will make this again, everyone loved it.

    So delicious! And so simple at the same time. Wonderful way to prepare salmon, it stayed beautifully moist and the flavours are amazing. Combines well with rice, and I added a simple cucumber salad with a basic dressing of a little soy sauce, rice vinegar, and some finely chopped red chilli (some oil might have been good...). Highly recommended!

    This is an absolutely wonderful recipe! So easy, so delicious... and no washing up! It's an impressive dish for a dinner party, but easy and quick enough to make when you dash in from work and want dinner on the table fast. Even my mother, who usually professes her dislike of salmon, has asked me to make this again. It really is one of those perfect recipes. But use foil - it's a little easier to work with than baking parchment which tends to have a life of its own...

    Really enjoyed salmon cooked this way. Very easy, added a little minced garlic to the parcel and served with stir fried vegetables and noodles. Fabulous.
