Gi assessment

Pasta gets the gold star in terms of Gi - spaghetti has a Gi of 30-50, depending on its country of origin. But this recipe keeps it within the lower end of the scale. Enjoy it al dente so that your body needs to work harder, as this preserves a lower Gi rating.
