Simple tomato sauce
A great sauce for pasta or white fish; you should find most of the ingredients in your kitchen

Vegetarian, Low-fat
- Heat 3 tbsp olive oil in a pan, add the garlic and cook gently for 3-4 minutes until it starts to stick to a spoon. Add the plum tomatoes, stir, cover and simmer for 20-25 minutes until the tomatoes have broken down into a thick sauce. Season and stir through another tbsp olive oil and the basil, if using.
Know-how
You can add a pinch of chilli flakes if you like it spicy. Fresh basil added at the end will give it an extra dimension, but it's not essential.
