Simple tomato sauce

A great sauce for pasta or white fish; you should find most of the ingredients in your kitchen

Method

  1. Heat 3 tbsp olive oil in a pan, add the garlic and cook gently for 3-4 minutes until it starts to stick to a spoon. Add the plum tomatoes, stir, cover and simmer for 20-25 minutes until the tomatoes have broken down into a thick sauce. Season and stir through another tbsp olive oil and the basil, if using.

Know-how

You can add a pinch of chilli flakes if you like it spicy. Fresh basil added at the end will give it an extra dimension, but it's not essential.

    This is out of one of Jamie Olivers books and never use any other recipe as this is fool-proof! even by son (19) can manage it then he add loads of veg to have with his pasta. Theres always a jar in the fridge. Try using oregan instead of basil, thats rather nice and the smell is gorgeous. Add bacon bits, muchrooms, courgettes, basically anything you would find in commercial jars.

    This is a great basic recipie wich can be easiliy elaborated on as you gain confidence in the kitchen. I like to add finely chopped and caramalised onions and a bit of lemon juice too. It also doubles up as a good sauce for pizza!

    im karl and love cooking im 15 years old and a beginner in cooking . . . i love tomato recipes and i am thinking of trying this recipe out ... i was wondering if anyone could help me and suggest something to serve with the tomatoe sauce ... nothing fish but something simple please ... thanks

    Carl, if you want to keep this simple cook some pasta and and serve together. If i was going to use this recipe- i would cook some mince (till it is all brown), add sliced mushrooms, a grated carrot and chopped onions, add the sauce and a splash of lea and perings sauce and cook for about 20 mins. serve with pasta. Part of fun of cooking is making it up!! Hope this inspires you

    This worked a treat for a simple sauce to go in the recipe for creamy courgette lasagna here on this site. Fried a few sliced mushrooms before putting in the tomatoes and used dried oregano in place of the basil listed here - just perfect for the purpose.
