Braised peas with lettuce
An easy but imaginative match for a roast dinner

Ready in 30 mins
- Cook the onion in a knob of butter for about 10 minutes until meltingly soft. Add the lettuce and cook cut-side down for 3-4 minutes. Add the stock and peas, cover and cook for 2 minutes then add the cream and simmer uncovered for another 5 minutes until the lettuce is just tender. Season.
