Lemon mousse

A nice light palate-cleansing dessert to end a meal, perfect after a heavy main course

Method

  1. Put the cream, lemon zest and sugar into a large bowl and whisk them together until the mixture starts to thicken. Add the lemon juice and whisk again until the mixture thickens further, don't let it get too stiff or you won't be able fold in the egg whites.
  2. Whisk the egg whites until they form soft peaks and then fold them into the lemon mixture. Spoon the mousse into 4 glasses and chill. Decorate with extra zest if you like.

    Absolutely delicious and an easy dessert to make for guests as you can do this in advance. I decorated the top with a mint leaf and they looked lovely. I'll make this again and again.

    Have made this a few times and it is a lovely light dessert. I would just warn you that the zest can cause problems when whisking, particualrly if the shreds are long. They wrap around the whisk and whip the mix out of the bowl, spattering everything in sight! This could be because I've always made quite large quantities. I would advise folding the zest just before the whites.

    Just a bit too creamy and not much flavour, even though I used the rind of a lemon and a lime. Ok, but I'll look for a lighter mousse recipe for another time.

    I made this for family and friends and it was a big hit with everyone! After reading previous comments I also added a crushed ginger biscuit base (mixed with a little melted butter) I put a couple of rasberries on the top and also served with almond thins - perfect! It was very light and tasty and I will definately be adding this to one of my favourite desserts!

    made this today for a light summer dessert, it was gorgeous very light and tasty. did make one change though added an extra juice of 1 lemon for extra zing! very tasty and very easy dessert.
