Lemon mousse

A nice light palate-cleansing dessert to end a meal, perfect after a heavy main course

Method

  1. Put the cream, lemon zest and sugar into a large bowl and whisk them together until the mixture starts to thicken. Add the lemon juice and whisk again until the mixture thickens further, don't let it get too stiff or you won't be able fold in the egg whites.
  2. Whisk the egg whites until they form soft peaks and then fold them into the lemon mixture. Spoon the mousse into 4 glasses and chill. Decorate with extra zest if you like.

    Delightfully easy & quick to make. Ideal as a light simple dessert to end a dinner. Personally when I make it next time I will add a little more lemon juice as I prefer a sharper taste but still very much enjoyed by everyone that tried it.

    Made this recipe over the weekend when I had my In-laws over for a Curry this rather delicious pud went down very well with all the family had very clean bowls...will be making it again,& again & again!

    This is fab!! Must admit though that I did use the juice of one extra lemon as found it a little too sweet and will probably use less sugar next time. Also served on a ginger biscuit base (9oz biscuits and 3oz sugar). Everybody loved it after having curry as it wasn't heavy at all. Will make this again definately!

    Made today for the first time. I had to double the ingredients as we had a few more than usual for dinner; I also added the zest and the juice of an extra lemon as I wanted to have a real lemony taste. Also I set the mousse on top of some crumbled digestive biscuits and topped of with fresh raspberries and the lemon zest. It was a great success and will be a favourite I think!!! Very easy and quick.

    I've just made this and it was delicious ! I used two lemons and stole the ginger biscuit crumb base idea ( thanks ). I've never made a mousse before and didn't realise how quick and easy it was. Will make again.

    This is a recipe that definitely benefits from being made in a larger quantity, I made it twice and I found the proportions for the smaller amount didn't work as well, it was more cream than mousse, as one other poster has indicated - and not very lemony. If you make it with about half again as much cream; with a third egg white; and a second lemon+zest, it's fantastic, tangy and has a better texture. A great cheat for the more classic - and fiddly - mousse made with gelatine. I've even frozen a bit to see how that might work out though I kind of expect the eggwhite and the cream to separate.

    Made this for a dinner party really easy to make,made a lemon curd and placed in the bottom of wine glasses left overnight. 5 minutes to make mousse next day put onto of curd pop back in fridge till pud time!! garnished before serving with raspberries, (good way to use both the egg yolks and whites in one recipe)could even sprinkle with meringue on top to make a lemon meringue pudding!!
