Quick hollandaise

Using a blender makes this hollandaise method foolproof but you don’t have to tell anyone

Method

  1. Melt the butter in a small saucepan or the microwave, you need it to get to boiling point. Whizz the egg yolks and lemon juice in a blender. When the butter reaches the boil, slowly pour it in with motor running until the sauce thickens. Season.

    this is a fabulous recipe especially in the morning for eggs benedict or florentine. i prefer to use a hand blender in a bowl because its is much quicker and easier to wash!

    This is delicious, I blend the eggs and lemon ready first and then wait for the butter to heat up and tip it in, really scrummy!

    Really quick & easy - blender in a bowl. Just a little tricky timing the sauce to coincide with the poached eggs - you need to use it straight away! Will be my standard recipe from now on.

    My friend uses a flask to keep the hollandaise warm, have not tried it yet but sounds like a good idea !
