Chocolate soufflés

These melting chocolate puddings are much sturdier than ordinary soufflés and will behave even if made ahead (but not cooked)

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter 6 medium ramekins. Melt the chocolate with the butter in a bowl over simmering water or in a microwave. Beat the eggs with the sugar until they are very light and fluffy and then fold in the flour. Fold in the chocolate mixture.
  2. Divide between the ramekins (put in the fridge at this point if you're making ahead). Bake for 8-12 minutes, the soufflés should rise and form a firm crust but you want then still to be slightly runny in the middle. Serve with cream.

Know-how

These melting chocolate puddings are much sturdier than ordinary soufflés and will behave even if made ahead (but not cooked). Just store in the fridge until you need them and remember to add a couple of minutes to the cooking time to compensate for the cold. The middle should still be saucy when they are ready.

    Using this for GSCE coursework and it is really good! For people who think it is too rich as a development I used 100grams milk chocolate and 100grams dark chocolate and 120 grams of sugar!! Great!!

    I made this for dessert on Christmas Eve - very straightforward to prepare and kept nicely in the fridge, uncooked, until we were ready. Absolutely delicious and I will be making it again for different guests tomorrow night for New Year's Eve dinner. Never thought I could make a souffle but this recipe gave me confidence. Rose like a dream and gooey in the centre.

    i whipped my eggs using an electric whisk and it took about 5 mins to get them really fluffy. I was nervous about leaving them in for longer than the stated time but they were in for about 15 mins, when i took them out they were cracked on top but still very gooey in the middle. Very rich too! Not sure i would make them again

    I ended up making 8. Very rich and delicious. I left them in a touch too long so not enough liquid inside. We poured cream into the top. Yum. Am making again this week-end. Couldnt believe they rose so high, and from the fridge too!

    I made this using half dark Greene and Blacks choc and half g and b milk choc. Excellent. rosecup beautifully despite being prepped early and cooked straight from fridge. Dusted with icing sugar. Looked really great. So tasty.

    These souffle's were absolutely delicious served with cream and went down a treat. I shall certainly make these again. I used mint chocolate for a difference and wow, what a dessert!!

    Definitely need an electric mixer for this - I whisked by hand & gave up on the first batch of eggs+sugar. Instead I added the yolks to the chocolate mixture & whisked the whites on there own, then added sugar gradually once I got soft peaks. Very rich recipe, although I guess that depends on the chocolate you add, I'd half fill the ramekins next time (I used the glass Gu ones). Overall, disappointing.

    This is a great recipe. Makes a lot more than the recipe states though. Keep an eye not to overcook them though, the melting middles are gorgeous.

    Made these for all the family,gone in moments. I put them into cook when we were eating dinner,wouldn't have them until 20/30mins after a large meal next time. Brilliant recipe and really easy and quick to do!:)

    Excellent recipe, especially the part where you can make it ahead and take only fifteen min to serve! Served with ice cream and cherries and was a great success. I added a tbsp of cocoa to make it more chocolaty as I'm an addict and I think it's better off divided between 8 ramekins rather than 6.

    Really easy to prepare if you have guests over! A lovely gooey center (be careful not to cook for too long, otherwise it becomes all sponge!) I served with double cream � but I think ice cream and fruit on the side would be a fantastic subsitution. I will definitely be doing this again!
