Chocolate soufflés

These melting chocolate puddings are much sturdier than ordinary soufflés and will behave even if made ahead (but not cooked)

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter 6 medium ramekins. Melt the chocolate with the butter in a bowl over simmering water or in a microwave. Beat the eggs with the sugar until they are very light and fluffy and then fold in the flour. Fold in the chocolate mixture.
  2. Divide between the ramekins (put in the fridge at this point if you're making ahead). Bake for 8-12 minutes, the soufflés should rise and form a firm crust but you want then still to be slightly runny in the middle. Serve with cream.

Know-how

These melting chocolate puddings are much sturdier than ordinary soufflés and will behave even if made ahead (but not cooked). Just store in the fridge until you need them and remember to add a couple of minutes to the cooking time to compensate for the cold. The middle should still be saucy when they are ready.

    Absolutely gorgeous and easy to make, i use the Gu pudding glass dishes for mine and that is more than enough for a serving as its very rich.

    Perfect - these are ideal for a dinner party because you can make them ahead and pop them in the fridge before cooking . I cooked them after we had finished our main course and they came out brilliantly - a real hit with the guests, but i reiterated what others have said this was way more than 6 ramekins full you could easily do 8 or possibly 10 depending on the size of your ramekins. I didnt add any extra time for them being in the fridge and they came out crusty on the outside and liquid in the middle.

    Cooked this for my girlfriends birthday. Needed a third hand really to fold in the flour as there was the odd lump. From fully chilled they took around 13-14 mins for me in a fan oven. Made this with a passion fruit sauce on the side and my girlfriend said it was the best dessert she ever tasted.....big thumbs up!

    I've made these a few times for friends and they have all asked for the recipe! I use 90% cocoa chocolate but whilst melting with the butter I also include a couple of slivers of orange rind which gives a great taste (remove before folding into the rest of the mixture). Simple but impressive.

    I prepared this tonight. They were fabulous!!! Although it may be too much and too rich, but we had had a light dinner, so it was not bad at all. I am thinking to add a bit of orange zest next time, or a bit og cognac ... or fresh strawberries after serving to compensate for the rich chocolate flavor. I would also say it is for 8 servings, rather than 6. ... it all depends how much chocolate lover you are. =)

    WOW these little chocolate delights was so easy to make and you can't get it wrong. I had to leave them in the oven for about 20mins on 160 with a fan oven as they did not look like anything was happening. When i filled the ramekins i did slide my thumb around the top of the ramekin Gordon Ramsey style and they risen to perfection just like Gordon would make. Very Very yummy indeed bullet proof to make time and time again a fantastic treat.
