  • 200g dark chocolate, chopped
  • 150g butter, cut into cubes plus extra for the ramekins
  • 6 eggs
  • 175g sugar
  • 125g plain flour

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter 6 medium ramekins. Melt the chocolate with the butter in a bowl over simmering water or in a microwave. Beat the eggs with the sugar until they are very light and fluffy and then fold in the flour. Fold in the chocolate mixture.
  2. Divide between the ramekins (put in the fridge at this point if you’re making ahead). Bake for 8-12 minutes, the soufflés should rise and form a firm crust but you want then still to be slightly runny in the middle. Serve with cream.

What a pity that your recipes are in grams and not ounces - otherwise we would all use the recipes on this website! Why not give the more mature cooks a break and include both. We will never get to grips with grams. Kindly keep us all happy.

It was a disaster. I followed the recipe exactly and ended up with big lumps of flour in mine. They also took 25 minutes to cook. They're not what I'd call a proper soufflé, very disappointed.

These were so simple and perfect even after chilling for a few hours before cooking. Can't wait to do them again!

My daughter has made this twice - once as a practise run at home, then in class, as part of her school 'ready steady cook' competition. She halved the recipe. Both attempts turned out very well, and she won!

For some reason my soufflés came out hard and they tasted of scrambled egg! six eggs seems like an awful lot? Are you meant to separate them??

Made these for a dinner party, and they were amazing! I am terrible at making desserts but these were so easy to prepare in advance, I cooked them for 15 minutes to allow for them being chilled and they were perfect! Definitely my new favourite dessert.

Wonderful, used this at a diner party went down a treat. The souffles rose wonderfully even though i was slightly careless when making them. Top class would recommend to anyone

Really easy to prepare if you have guests over! A lovely gooey center (be careful not to cook for too long, otherwise it becomes all sponge!) I served with double cream – but I think ice cream and fruit on the side would be a fantastic subsitution. I will definitely be doing this again!

Excellent recipe, especially the part where you can make it ahead and take only fifteen min to serve! Served with ice cream and cherries and was a great success. I added a tbsp of cocoa to make it more chocolaty as I'm an addict and I think it's better off divided between 8 ramekins rather than 6.

Made these for all the family,gone in moments. I put them into cook when we were eating dinner,wouldn't have them until 20/30mins after a large meal next time. Brilliant recipe and really easy and quick to do!:)

This is a great recipe. Makes a lot more than the recipe states though. Keep an eye not to overcook them though, the melting middles are gorgeous.

Definitely need an electric mixer for this - I whisked by hand & gave up on the first batch of eggs+sugar. Instead I added the yolks to the chocolate mixture & whisked the whites on there own, then added sugar gradually once I got soft peaks. Very rich recipe, although I guess that depends on the chocolate you add, I'd half fill the ramekins next time (I used the glass Gu ones). Overall, disappointing.

These souffle's were absolutely delicious served with cream and went down a treat. I shall certainly make these again. I used mint chocolate for a difference and wow, what a dessert!!
