Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter 6 medium ramekins. Melt the chocolate with the butter in a bowl over simmering water or in a microwave. Beat the eggs with the sugar until they are very light and fluffy and then fold in the flour. Fold in the chocolate mixture.
  2. Divide between the ramekins (put in the fridge at this point if you're making ahead). Bake for 8-12 minutes, the soufflés should rise and form a firm crust but you want then still to be slightly runny in the middle. Serve with cream.

Know-how

These melting chocolate puddings are much sturdier than ordinary soufflés and will behave even if made ahead (but not cooked). Just store in the fridge until you need them and remember to add a couple of minutes to the cooking time to compensate for the cold. The middle should still be saucy when they are ready.

Delicious dessert ...excellent for entertaining as it can be prepared before hand and then popped into the oven for a few minutes when ready to eat.

I really wanted to like this but it was just too rich for us all and no-one even got half-way through them. But perhaps something went wrong as after 15 mins at Gas 4, the top was spongey but the rest was like a hot, runny mousse (not "slightly runny"!). Too rich and too much. If I made them again, I'd leave in the oven longer or make in small espresso cups.

I have made this a few times and it always gets silent nodds of approval! Very easy to make but you do need an electric whisk to get a good fluffy mixture.

A great recipe! Fantastic to make ahead, pop in the fridge and your guests won't even notice when you put them in the oven ready to produce them piping hot and gloriously gooey 8 minutes later!

these would have been lovely, had I taken them out of the oven sooner!! i added extra time as they had been in the fridge.I was waiting for the top to get a crust.. I think I waited far too long. keep an eye on the cooking time or you end up with muffins!!!

These are really good. I ended up making 8 with this recipe so put four in the fridge overnight for the next evening and they were even better the following day. Would definitely make them again.

Perfect first time. I do think you need to watch them cooking closely because they appear to do nothing then all of a sudden they start to crust over. Recommend this recipe to everyone!!!

So easy, so quick and SooOoooOO Yummy! I served with blueberries and it was delicious! I think i cooked slightly too long, and made the rash mistake of not seiving the flour... but i can bear this in mind for next time. Will defo be a feature of my next dinner party!!
