Vanilla gelato

Method

  1. Whisk the egg yolks and sugar in a large bowl until the mixture is thick and pale yellow. Heat the milk to a simmer then whisk it into the egg mixture. Pour back into the pan (rinse it out first) and cook over a low heat, stirring constantly until the mixture is thick enough to coat the back of a spoon. Don't boil or it will scramble. Stir in the cream and vanilla extract and cool.
  2. Strain into an ice-cream maker (or freezer box) and churn until frozen (or freeze). Serve scoops in chilled glasses decorated with a vanilla pod strip.

    The taste of this was too egg-y for my liking, but the texture was nice and smooth. Definitely good base to work with.
