Sweet potato & chilli soup

Sweet potatoes this make a colourful, fibrous and extremely satisfying soup - with a kick

Method

  1. Melt a knob of butter in a large pan, add the onion, chilli, coriander and garlic and cook for about 8 minutes until softened. Add the sweet potato and cook for a few more minutes. Add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
  2. Mash, or blend if you want a smooth soup. Season and serve with a sprinkling of cheese and a pinch of paprika.

    As mentioned before this really needs a bit more stock, otherwise it is a bit too thick. It made a great lunch for work this week though with a bread roll for dipping!

    The recipe is perfect , just like everybody else though i added extra stock 750- 1ltr is enough... it has a great kick to it, i also just grated normal cheddar over it and served with a tiger loaf delicous. Will make it again, great on a cold and wet day.

    Tasted delicious, but also very similar to dishes I've made before. If you like dahl with sweet potato, you will definitely like this. Can maybe even add some spinach! I just wish it had stood out a little more.

    I doubled the stock and added some cream cheese. It's absolutely delish, and really easy to get right! This was my first attempt at cooking soup and I'm already hunting out my next recipe to try!

    The recipe is very yummy, I definitely will be making this a regular. The cheese made a wonderful a complement! Used 1 litre of stock as other people advised and it was the perfect consistency! Amazing!

    this is a lovely soup but a bit too thick left all the ingrediants the same but doubled the stock to 1litre,had it as a starter at a dinner party went down a treat

    My first try at this recipe was fine, although it's pretty easy...you could probably make it up as you went. I used it as a guide to the amount of sweet potato needed. It turned out very nice, but I felt it needed more garlic and chilli... make it more punchy. I made it again, doubling the garlic and chilli, and adding a half teaspoon of ground cumin: perfect...sweet, hot and delicious.

    This is the first soup I've ever made and it was fantastic! I didn't have any garlic handy but did use a very large onion to compensate. I also forgot to add cheese but it was so amazing anyway I don't think it needed anything else. I've got the soup making bug now so I'm off to see what else I can make!

    I love this soup its really quick and easy to make and adding the extra water as suggested worked a treat, I prefer it blended and smooth rather than mashed

    A great simple hearty cold winter nights dish. I added a potato as well (as it happened to have one leftover) and it all worked out wonderful with crusty bread. I didn't have Gruyere, but cheddar and a bit of blue worked well too.

    Lovely soup, I used just under 700g of potato and 600ml of veg stock and the consistency was perfect. I had lovely warm bread rolls and a dollop of tzatki with the cheese and parprika and it was delicious.

    A really good taste, but if you are intending to blend until smooth. you will need to double the quantity of stock. Otherwise, it will have a mashed potato consistency.

    I used 100g less potato in this so didn't think I'd have to increase the stock, however my soup was more like baby food. The flavours are great but the thickness and consistency aren't.
