Sweet potato & chilli soup

Sweet potatoes this make a colourful, fibrous and extremely satisfying soup - with a kick

Method

  1. Melt a knob of butter in a large pan, add the onion, chilli, coriander and garlic and cook for about 8 minutes until softened. Add the sweet potato and cook for a few more minutes. Add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
  2. Mash, or blend if you want a smooth soup. Season and serve with a sprinkling of cheese and a pinch of paprika.

    I loved this soup, wonderful and filling and with a nice spicy kick! I felt that it needed a touch more water, as it was slightly too thick.

    I would have to say this soup recipe is really nice and adding more stock totally depends on how thick or thin you like your soup. I blended my soup but kept a little to add and then added a little more water about 100mil in total but i dont think 1ltr is needed. I also added 1 tin of sweetcorn which gave it a nicer flavour and fresh chillies are also alot better then dried.

    Liked the look of this recipe, so I gave it a try. Didn't have enough sweet potato so added a couple of carrots and used vintage cheddar instead of Gruyere. Also seemed to need more liquid than the recipe so used a pint and a half of stock. Delicious!

    Really tasty soup, just right for when your under the weather. I recommend adding a little extra stock like some of the others have as it was pretty thick soup.

    Struggling with a cold Swedish winter and this certainly did the trick! Used fresh chillies and a bit more stock like everyone else said: delicious.

    Same as most add more stock but the soup is truly amazing or at least my mrs is for cooking it!! Really tasty, full of flavour and definately fills you up!

    Made this soup at school with my yr4 class. Very successfully, had some of my fussiest eater coming back for seconds. I had to thin it with a bit of milk, and would add a tad more chilli if i made it at home, but the kids loved it.

    Omg this was amazing. Just made it for two of us and it was delicious! Very easy to make. Added 900ml of stock as advised and it was of perfect consistency. The grated cheese on top helped to calm the chilli flavour down. I will be making this on a weekly basis from now on :)

    Delicious!! I agree needs more stock, I used a kilo of potatoes and needed almost a litre of stock. One of the nicest soups I have tried since starting to make my own--- and there is no doubt that homemade soup is not only nicer but much cheaper too!

  • butter
  • 1 onion , roughly chopped
  • 1 red chilli , finely chopped or a pinch of chilli flakes
  • 1 tsp ground coriander
