Brie & spinach croissants

What better way to wake up in the morning than to a tray laden with coffee and a couple of these oozy and indulgent croissants?

Method

  1. Heat the grill to high. Cook the spinach in a little butter with the garlic until wilted. Squeeze out excess liquid. Lightly toast the croissants on the cut side then pile on the spinach and brie. Grill again until oozing, then fold together.

    Unlike Alex's comment I thought that the filling with the croissants was wonderful and so did all my breakfast guests particularly the vegetarians.Not sure why Alex tried it in the first place.!

    I made this this very morning for a surprise breakfast in bed for my boyfriend's birthday. We absolutely LOVED it!! I used a bit more spinach and brie, though. We loved these so much that we ended up having two "sandwiches" each! I think it's crucial to use really good quality croissants, make sure they are not too crumbly when you bite into it, but nice, buttery and soft. Alongside freshly squeezed OJ and some fresh blackberries - a perfect breakfast!

    Delicious. Definitely use good quality croissants so they don't totally fall to bits. Will add a bit more garlic next time.
